CARROT STEW

  • Blend washed carrot, onion, and scotch bonnet; set aside
  • Heat up some oil in a pan; add in some salt & sliced onion, stir for a while
  • Pour blended carrot into oil, stir and cover cook for few minutes
  • Add tomato paste ,stir and cook on low heat for about 5 minutes
  • Add cooked assorted meat, meat stock, seasoning cubes and salt to taste. Cook on low heat till its done
  • Garnish with scent leaves and set aside
  • Wash your rice and Boil rice till it’s done
  • Serve rice with carrot stew
