1 teaspoon Baking powder
pinch salt
1 teaspoon Sugar
2 tablespoon Butter
7 Egg
Coconut flavour
Vegetable oil
Unripe pltain
Cocoyam
Avocado pear
Onion
Red pepper
Seasoning cube
1 Lemon

COCO YAM & PLANTAIN CHIPS EGG ROLLS AND GUACAMOLE

    • Measure into bowl 2 cups of flour, 1 teaspoon of baking powder, 1 tablespoon of sugar, pinch of salt, 2 tablespoons of butter. Mix all together to get a crumb like texture
    • Make a well, add 1 egg, a dash of coconut flavor and then mix
    • Add 9-10 tablespoons of water to the mixture, mix well to form a dough
    • Transfer dough to floured flat surface, knead dough till its smooth and non-sticky to the hand
    • Cover dough in a bowl and allow to rest for 10-15 minute
    • Peel boiled eggs and set aside
    • Cut dough into bit, used dough to wrap floured egg
    • Deep fry in not too hot oil till golden brown
    • Bring out of oil to drain off excess oil then set aside
    • Peel unripe plantain, slice into bits then fry till golden brown, set aside to drain off excess oil
    • Peel coco yam, wash and slice into bit. Fry till it’s done and crispy, set aside
    • Cut avocado pear open, remove the flesh, squeeze lemon juice, add some sliced onion,red pepper, seasoning cubes then mix well to incorporate to make the guacamole
    • Serve egg roll, coconut chips , plantain chips with the guacamole
