COCONUT JOLLOF RICE & FRIED TURKEY

    • Place turkey into a cooking pot, add chopped onions, ginger powder, thyme, seasoning cubes, some water; stir and cook till it’s done
    • Dice carrot and set aside
    • Break coconut, remove from shell, put into a blender with water then blend
    • Sieve the shaft and put the coconut milk aside
    • Fry cooked turkey in heated oil and set aside
    • Add jollof mix tomato paste into 2 cooking spoons of oil in a pot then cook for 4 minutes
    • Add coconut milk, turkey stock, seasoning cubes, salt to taste, coconut water to the jollof mix; stir and cook to boil
    • Add rice, stir then cover to cook
    • Add carrot, green peas, sweet corn, spring onions, fluff rice to mix then turn off the heat and allow to rest
    • Serve jollof rice with fried turkey
