MALABAR SPINACH EGG SAUCE WITH PLANTAIN

    • Chop all vegetables; tomatoes, onion, red bell pepper, yellow bell pepper, scotch bonnet
    • Chop chicken sausages, fry then set aside
    • Pick Malabar spinach leaves from the stem, wash, clean, slice then set aside
    • Fry onion, garlic, pepper, tomatoes
    • Break eggs into a bowl, whisk and set aside
    • Add the yellow, red bell pepper, a seasoning cube, sausage, spinach and whisked eggs
    • Slice plantain then fry till its golden brown in heated oil
    • Serve plantain with egg sauce
