Jollof tomato mix paste
Fish
Corn flourr
Seasoning cubes
Garlic powder
Black pepper
Vegetable oil
to taste Salt

SQUIRREL FISH & JOLLOF RICE

  • Add 2-3 cooking spoons of vegetable oil, some salt, jollof tomato paste mix into a pot; stir and cook for 4 minutes
  • Wash rice and set aside
  • Add 1 litre of water, stock, seasoning cubes into the jollof mix. Cover and allow to boil
  • Add already washed rice, stir, cover and cook till done
  • Fluff and allow to rest
  • Filet the fish to remove the bone, score the fish and set aside
  • Season corn flour with salt, seasoning cubes, garlic powder and black pepper
  • Rob fish with seasoned corn flour and deep fry in heated oil
  • Garnish fried squirrel fish with ketchup
  • Serve jollof rice with squirrel fish
